Rosé Nicol

Rosé Nicol is a semi-dry rosé wine with a pastel pink color and 11.8% alcohol content. It is made from 80% Cabernet Sauvignon and 20% Merlot grapes. Both varieties are blended immediately after harvest and co-macerated. After a ten-hour maceration, fermentation follows, which is stopped in time by cooling. This wine is bottled in April. When poured into a glass, besides its beautiful color, this wine will delight us with aromas of red fruit, especially strawberry surface fruit. In taste, we can find sweet dates and even some vegetable notes. Rosé Nicol pairs excellently with seafood dishes, such as green pasta with shrimp, various preparations of shrimp, large blue fish like mackerel or tuna with Swiss chard in a Dalmatian style, and semi-hard cheeses. It should be served chilled at 10 degrees Celsius.

Vinification

During the fermentation in conical stainless steel tanks, extreme attention was given to an extraction aimed at fresh and fragrant aromas, full colors, and supple, elegant textures and tannins. Once the wine had been run off its skins at the end of the fermentation, it was put through a full malolactic fermentation in oak barrels to fully bring out the finesse and expressiveness of the aromas. The aging process, which lasted approximately 12-14 months, then began and took place in 60 gallon French and Hungarian oak barrels, partly new and partly used once previously.
