Merlot Baćac offers a rich palette of aromas, presenting scents of forest fruits, nettle leaves, dandelion stems, rose hips, marzipan, vanilla, and chocolate. In taste, it is dominated by notes of bitter chocolate and dark fruit jams. The grapes are harvested at the end of September and immediately processed. After a ten-day maceration, a fermentation period twice as long follows. After racking, the wine is aged in stainless steel tanks, and by the end of March, the majority is already bottled, while a portion is aged in wooden barrels. This Merlot pairs excellently with grilled dishes, especially with beefsteak, sirloin steak, and rich red meat cuts, as well as minced meat dishes. It also complements creamy desserts. It is best served at a temperature of 15-16 degrees Celsius.

Vinification

During the fermentation in conical stainless steel tanks, extreme attention was given to an extraction aimed at fresh and fragrant aromas, full colors, and supple, elegant textures and tannins. Once the wine had been run off its skins at the end of the fermentation, it was put through a full malolactic fermentation in oak barrels to fully bring out the finesse and expressiveness of the aromas. The aging process, which lasted approximately 12-14 months, then began and took place in 60 gallon French and Hungarian oak barrels, partly new and partly used once previously.
